Abstract: 

In July 1996, the Massachusetts Department of Corrections (DOC) implemented a heart-healthy diet at all of its facilities. This change made the house diet low in fat and sodium, restricted in cholesterol, and high in fiber. This implementation effectively eliminated a number of diets: low sodium, low cholesterol, high fiber, and weight management. The diet change was the result of a collaborative effort between the DOC Food Services, the Correctional Medical Services (CMS) Registered Dietitians, and the statewide Medical Director. There were a number of reasons for the adoption of the heart-healthy diet.
